Winter Vegetable Curry

Ingredients:

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cups cauliflower florets
  • 1 cup green beans
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tsp Cyprus Flake Salt
  • 2 tbsp olive oil
  • Fresh cilantro (for garnish)

Instructions:

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Add Vegetables: Stir in the carrots and cauliflower, cooking for a few minutes to soften slightly.
  3. Season: Sprinkle the curry powder and Cyprus Flake Salt over the vegetables, stirring to coat them evenly with the spices.
  4. Simmer: Pour in the coconut milk and add the green beans. Reduce the heat to low and simmer for 15 minutes, allowing the flavors to meld.
  5. Garnish and Serve: Ladle the curry into bowls and garnish with fresh cilantro. Serve warm with rice or naan on the side.
